The dinners

Two gourmet dinners will be proposed during this gourmet weekend.

*On Friday night, two exceptional chefs will offer you a menu that they have developed together.

This is how we will receive Numa MULLER, a young thirty-year-old cook, self-taught cook. No hotel school but training on the job, in London, for 2 years. I also learned the trade at Baumanière, at Armand Arnal à la Chassagnette and at Caroline Pons in Arles.”

Today, he officiates at the Madame Jeanne restaurant in Marseille.

The cook who “relies on the tide and vegetables” asks the fisherman to bring back the best of his fishery, fish killed in the way of ikejime, a Japanese method of slaughter that reduces the stress and pain of the fish.

By his side, we will find a chef seen in Top Chef in 2020: Pierre CHOMET.

Pierre did his apprenticeship in large starred houses before spending six years in Thailand. His first post? It will be at Bristol. Initially part of the brewery, he eventually joined the 3-star restaurant of the establishment, with chef Éric Fréchon.

He remains there for two years before making a season in La Pinède, the three-star of the French Riviera. Here is the meeting with Arnaud Donckele, a philosopher of the kitchen, with a touch of madness. The Bristol taught me the trade, it taught me the passion». Then Pierre joined London as a clerk at L'Atelier, Joël Robuchon’s restaurant.

In Bangkok, where he will spend 6 years, the young chef will participate in the opening of another 2-star hotel restaurant, the Chef’s Table. Fresh back from Bangkok to take part in Top Chef (2021), Pierre shares the same taste for Asian cuisine as Paul Pairet, of whom he will join the brigade, even if he hesitated with Michel Sarran, who had greatly enjoyed his revisited Thai pad.

Their menu will be accompanied by a selection of the best wines of the chateaux Montus and Bouscassé by M. Brumont.

*On Saturday night, you’ll discover a 5-chef dinner! Indeed, all the chefs of our tray will prepare a dish of this gastronomic menu «around the products of the market». This 5-course menu is a guarantee of travel and discovery.

Both menus will be served at the Casino de Barbotan les Thermes.
